O Daye of Manie Appointmentes

January 6th, 2009 (07:32 am)

So, at one point, I thought it would be a good idea to knock off my eye appointment and dental appointment on the same day. Decision on that is pending. I'm off at 10:30 for the optometrist, then off to the dentist at 4:30. Eye exam? No sweat! Dentist?.....uh. Due to the whole grad school thing plus a lack of insurance, I haven't been for two years. I'm sure there are many things wrong with my teeth. Not looking forward to that much, really. :D Especially because my dentist is not a very gentle-handed man, and my gums always feel like they've been polished with a weed whacker post-visit. But this will hopefully give me time to fill any cavities I might have before leaving for Japan. I haven't had a cavity in about six years or more, so the odds are against me, and I'm just assuming I'll have some. *shrug*

The other night, I made chocolate chip walnut pumpkin bread. ^_^ It occurs to me that it's a good and fairly healthy recipe, while also being insanely easy, so I shall post it here.

1 box of pumpkin bread mix (I use Krusteaz, but I'm sure other brands would work just as well)
1 can of 100% pure pumpkin
1/4 C to 1/3 C of chopped walnuts (pecans are also good, depending on personal preference)
1/4 C to 1/3 C of semi-sweet chocolate chips (depends on how much you like in your bread. ^_~)

1) Mix pumpkin and pumpkin bread mix together in a bowl until well blended.
2) Stir in walnuts and chocolate chips.
3) Pour batter into greased/Pammed loaf pan
4) Bake according to instructions on the bread mix box, until you can stick a toothpick in and it comes out clean. It usually is done toward the lower end of the time range given (i.e., if it says bake for 52-57 minutes, it's usually done around 52 for me), but oven temps vary, and all that.

Anyway, I just thought I'd share. ^_~ The bread comes out pretty moist without being oily/greasy, and of course the added pumpkin is a nutritional plus. My dad loves this stuff to death.

Well, I'm gonna go now and floss my teeth for the first time today. *salute!*
